This review describes studies on ensuring the microbiological safety of food. These contribute to processing and storage high-quality highly safe foods. The are focused these areas investigation: 1) simple rapid methods for detecting identifying various foodborne pathogens bacterial toxins; 2) scientific evidence at basis hygiene management production agricultural produce, such as food poisoning contamination from cultivation environment produce that raw materials products survival produce; 3) effective decontamination through combination treatment with detergents sterilizers 4) elucidating mechanisms action ingredients growth inhibition vegetative cells spores, activity toxin, biofilm formation development technologies findings improving foods, which leads science technology industry.
